Ingredients
3 Tbsp Freeze-dried Feijoa Powder
The juice of one lemon
4 eggs
150 g olive oil
400 ml rice or dairy milk
300g GF flour mix
50 g white rice flour
2 Tbsp baking powder
300 g sugar
150g walnuts
Method

Pre-heat the oven to 180°C or 350°F
In a large bowl, mix feijoa powder and lemon into a paste add more lemon juice if need be. Whisk the eggs then mix in the feijoa, lemon, oil and milk. Add the dry ingredients and beat until you have a smooth homogenous batter. Lastly, add the walnuts and give a quick stir. Pour the cake batter into a greased baking dish approximately 20 to 23 cm round and bake for an hour.
Icing

3 Tbsp Freeze-dried Feijoa Powder
1 Tbsp lemon juice
8 Tbsp Coconut oil
1/8 tsp salt
2-3 tsp milk of your choice
1 c icing sugar
Mix all ingredients in order of accordance in a bowl until desired texture is achieved
