Feijoa Salsa

Eat the rainbow with this snazzy salsa!
Ingredients
3 cups feijoas, peeled and chopped
one red onion finely diced
3 small capsicum - 1 red 1 yellow 1 orange
2 cloves of garlic crushed
dash of black pepper and a wee small dash of salt
juice of 2 limes
smoked paprika- 1-2 Teaspoons
1 small Tbs Cumin
and hot chilli to taste (optional)
5 Tbs of olive oil
1 handful fresh coriander, torn or chopped
Directions
- 1 Dice feijoas, onion, capsicum, crush garlic add together in a bowl
- 2 Add lime juice, salt and pepper and all the rest of the spice and herbs coriander leaves
- 3 Mix together and serve with corn chips as a dip or on anything!
